Michael Collins didn’t set out to build an empire, he set out to build places that feel like home. A proud Houstonian, born and raised, he has spent more than two decades creating spaces where good food and good company can turn any night into a story worth remembering.
Michael has helped shape some of Houston’s most beloved destinations, each distinct, yet all sharing the same spirit. From his first concept, The Fish Restaurant & Sushi Bar, a Midtown staple since 2002, to the playful newcomer Ducky’s Jr in Montrose, his venues invite people to settle in, laugh a little louder, and stay a little longer. His latest vision, Collins Lobby Bar, transforms 3,500 square feet in the Galleria into an elegant cocktail lounge designed for connection and conversation, set to open in Winter 2025.
